Our PEAK Cabernet Sauvignon is a selection of the very best blocks, marrying the grace of Attelas and the power of Edcora. The 2013 vintage has aromas and fruit flavors of the black cherries, Santa Rosa plums, and fresh mountain blueberries that grow on the hillsides, along with savory flavors of black olive tapenade, purple sage, and the native chaparral. The extremely long and pure finish shows hints of Tahitian vanilla, baking spices, and Mexican chocolate. With a compelling balance of complex flavors framed by ripe, mouth-coating tannins, we feel the 2013 PEAK Cabernet Sauvignon will continue to evolve beautifully for the next 20+ years.
The 2013 vintage opens with a bouquet of mountain flowers, rose petals and violets that dot the hillsides. On the palate we find aromas and flavors of fresh raspberry tart, Luxardo cherries, dried apricots, plum skins, and bramble berries. The elegant structure and ripe tannins display the dusty, slightly cooler nature of the vineyard and combine with a lively freshness and aromas of cocoa powder, allspice, cinnamon, and sweet tobacco leaf that continue to evolve through the long, elegant finish. We feel this vintage will continue to develop and add an elegant bottle bouquet over the next 15 to 20+ years in your cellar.
A deep nose of jasmine and orange blossoms reminds us of the citrus trees and white flowers along the entrance to our Estate. The warm, extended sunshine we receive above the fog-line shines in ripe, yet balanced flavors of grapefruit zest, Meyer lemon oil, early melon, tangerines, and key lime pie. The elegant structure and fresh acidity of this graceful wine reflects our meticulous work in the vineyard, and carries through with hints of wet slate and sweetgrass on the very long and smooth finish.
